Pumpkin Soup Recipe
My Lovely granny would refer to this as Pumpkin Shoop!
Prep: 20 mins Cook: 30 mins
Ingredients you will need:
- 1kg of pumpkin (the fleshy bit!)
- Dilishque curry paste
- Optional: Salt and Pepper
- Optional: Milk or cream
Remove the skin and seeds from your pumpkin and chop the flesh into 3cm cubes.
Place in a large saucepan and cover with water.
Bring to the boil the reduce heat to a simmer.
Keep the water level topped up to the level of the pumpkin by adding boiling water.
After approximately 30 minutes the pumpkin should be soft.
Stir in a quarter to half teaspoon of Dilishque Curry Paste. (The paste is a concentrate so add less then adjust to your taste preference).
Season with salt and pepper.
Liquidise in a blender or pass through a sieve.
Taste and adjust flavour as required.
Add a small amount of milk now and boil or add cream when serving the soup
Serve hot on its own or with your favourite bread.
