Serves 4 | Prep time 10 minutes | Cooking time approx. 20 minutes
You will need:
Gently heat oil and add diced onions.
On a medium heat and stir until onions are soft and translucent. Try not to brown them, but it’s not a problem if that happens.
Stir in 1/2 pot of Dilishque curry paste with two tablespoons of water.
Turn up the heat high and add tomatoes.
Bring to the boil and simmer for 8 – 10 minutes.
Optional: Add seasoning.
Gently place fish into the sauce, then spoon the sauce over the fish fillets, cover pan with a well-fitting lid.
Cook on a low to medium heat until the fish is cooked.
Ready to serve
